Sushi Yama opened July 18 at 7790 U.S. Highway 19 N in Pinellas Park, converting a former WingHouse into roughly 8,000 square feet of all-you-can-eat Japanese dining. The space seats approximately 200 and, per the operator’s Instagram, required about a year and a half of renovation before the doors opened.
The kitchen works to order. Rolls, sashimi, and hand rolls come out fresh to the table rather than from a steam display — a distinction the operator led with in announcing the opening. The menu extends well beyond sushi: hibachi plates, yaki udon, tempura, and katsu round out the savory program, alongside specialty rolls including the Little Tokyo and Snow White, sushi boats sized for group dining, and a full bar.
The WingHouse footprint at this address — a high-traffic stretch of U.S. 19 N with the wide-format floor plan the chain favored — was built for high-volume casual dining. Sushi Yama’s operators did not carry that interior over intact: an 18-month renovation window points to a substantial rebuild rather than a surface refresh. At 8,000 square feet and 200 seats, the capacity is suited to the throughput demands that come with an all-you-can-eat service model.
Sushi Yama is open now at the U.S. 19 N address. Whether the made-to-order production model holds across a full house will be the early test of the concept at this scale in Pinellas Park.
