Catalina's La Cantina has soft-opened at 10 S. Pinellas Ave. in the Tarpon Springs Historic District, a few blocks from the Sponge Docks. The scratch-kitchen Mexican concept arrives in a building that has stood since the 1920s — first as a private residence, then as what the operator describes as Tarpon Springs' first gas station, and now as a restaurant with indoor seating, a patio, and a bar stocked with fifty tequilas.

The restaurant takes its name from Catalina, the chef who built the menu. Her program runs handmade tortillas, fresh tamales, and a tableside guacamole anchored to a family recipe. The menu changes regularly; the kitchen does not work from a fixed card.

Behind the bar, six taps run alongside that fifty-bottle tequila collection. The indoor-patio configuration is a product of the building's renovation — the structure itself was not built for restaurant use.

The path to opening stretched across several years. The LLC was filed in 2019, and the restaurant was originally planned to open in 2021. That timeline slipped. The soft open puts the concept into service roughly seven years after the entity was formed.

Pinellas Avenue through the Historic District sits a few blocks from the Sponge Docks, Tarpon Springs' established corridor built around the city's Greek heritage. The two areas are geographically close but commercially distinct; the Historic District side of Pinellas Avenue runs at a smaller, more independent-operator scale. A concept built around a named chef's family recipes, a rotating scratch menu, and a fifty-label tequila program operates at a specific register on this block.
