Matilde, a coastal Mexican steakhouse from Next Level Brands, is taking the ground floor of AER at 300 W Tyler Street in spring 2027. The concept is the operator's fifth — following Boulon, Forbici, and Union New American — and arrives with first renderings and an opening menu released via Instagram.
Co-founder Andrew Wright named the restaurant after his Colombian grandmother. The team developed the opening menu after spending time in Mexico City, per the operator's post.
A live-fire hearth anchors the kitchen, designed to run steaks, seafood, poultry, and vegetables. The opening menu spans rib eye and pork al pastor tacos, lamb shank barbacoa, hearth-roasted chicken in mole negro, shrimp aguachile negro, and a heritage pork chop in pipián verde — preparations that move between raw-finished seafood and slow-braised proteins without departing from the live-fire premise.
The room seats nearly 300, with a dedicated 50-seat bar devoted to tequila and mezcal. Matilde is structured for all-day operations across four distinct menus — lunch, brunch, dinner, and late night — each written as its own program rather than a scaled version of the same list.
Spring 2027 ties the opening to AER's delivery along West Tyler Street. With a nearly 300-seat room and four daypart menus, Next Level Brands is committing a large-footprint, all-day format to the block's ground floor. How the late-night program performs once the building fills out will be among the first signals for the concept's positioning — and for whether the West Tyler corridor develops the after-hours demand the format requires.
