One of downtown St. Petersburg’s historic buildings is getting a new owner as The Sourdough Co. prepares to relocate.

The Sourdough Co. has operated in the EDGE District for nearly three years and is now moving into the former Union Trust Bank building at 895 Central Ave.

The new bakery and cafe will occupy the 11,000-square-foot building, which includes three floors, a mezzanine and a full basement. The historic bank building has been vacant since 1996.

“This new location will finally give us room to show you just how many wonderful things sourdough can make,” the company said in an Instagram post. “More room to bake. More room to create. More room for our team, our community and the ideas we’ve dreamed about since the beginning.”

Three years ago, the company said it was looking for a small storefront. Now, The Sourdough Co. says it has outgrown its current location.

The Sourdough Co. will remain open at its 113 Central Ave. location throughout construction so customers can continue to enjoy their favorite bites.

The larger location will give the company more space to expand its food and drink options, increase bakery production and grow its staff.

Customers will also have more space to lounge and enjoy their food. The owner told St. Pete Rising that the basement will offer a quieter, moodier atmosphere, while the bank vault will be open daily for seating.

“We have the honor of bringing this building back to life while protecting what makes it so special,” the company said in its Instagram announcement. “We’re preserving its beautiful windows, original brick and massive bank vault with deep respect for its history.”

The Sourdough Co. told St. Pete Rising it hopes to open the new location in early 2027, though permitting and construction could affect the timeline.
