Mei takes over the 2,700-square-foot former Bento space at 320 3rd Street South in downtown St. Petersburg this spring. Executive Chef Alex Chamberlain (formerly chef de cuisine at Michelin-starred Kōsen in Tampa) leads the kitchen alongside Michelin-awarded Sommelier of the Year Benjamin Coutts. The menu blends classical French and Nordic technique with Japanese ingredients: in-house fermentation, koji aging, dry aging, and binchotan grilling. Two rooms run on different formats — a 50-seat à la carte Living Room and an 8-seat Kitchen Counter for chef-guided tasting menus.
