Flight West is open on Sunset Drive in South Miami, pairing a live-fire kitchen with a whiskey program the operator puts at more than 350 selections. Executive chef Juan Suazo — whose résumé includes KYU and Komodo — leads the kitchen, built around a Mibrasa charcoal oven.
Suazo's previous work at KYU and Komodo places him inside two of Miami's more closely watched dining programs. At Flight West, the Mibrasa charcoal oven is the menu's foundation: the operator describes the concept as globally inspired, a framing that allows range across proteins, vegetables, and preparation styles without locking the kitchen into a single regional tradition.
The whiskey program, at more than 350 selections by the operator's count, is positioned as one of the area's most extensive spirits collections, per the operator's Instagram. A list that size implies a room designed around extended stays and deliberate exploration — not a bar where spirits play a secondary role to the food.
The operator describes the overall atmosphere as "polished late-night," a phrase that sets the operational register. Combined with a live-fire kitchen and a deep spirits program, Flight West is built for a guest arriving after the conventional dinner window — a format that requires consistent late-night traffic to sustain both the kitchen and the bar program.
Flight West is now open on Sunset Drive. With Suazo's kitchen operational and the whiskey program in place, the first measure of the concept will be whether South Miami's dining audience — and visitors from elsewhere in the metro — embrace the late-night format the operator is leading with.
