The beef comes from a family-owned ranch in Mt. Pleasant, Texas, where cattle are raised and finished on grass. The operator's Instagram frames the model as ranch-to-table: the Estrellas own the land, raise the animals, and move the beef directly to the counter on SW 8th Street rather than sourcing through commodity distributors.
The concept was driven by Nicolas Estrella, founder of Estrella Insurance, who, per the operator's Instagram, believed strongly in moving away from commodity corn-fed beef. The menu centers on grass-fed, grass-finished smash burgers. Additional menu details — sides, pricing, and hours — were not included in the initial announcement.
