The sourdough format is the sharpest differentiator the operator has put forward. Where conventional yeasted donuts rely on commercial yeast for a rapid, predictable rise, sourdough versions use a live-culture starter that extends fermentation, produces a denser crumb, and introduces a mild tang. The production method demands more consistency in temperature and timing than a standard shop runs on, making the back-of-house setup a meaningful operational variable.
