Phat Boy Sushi has opened its seventh South Florida location at 11701 Lake Victoria Gardens Avenue in Downtown Palm Beach Gardens — and this one carries a distinction the brand's previous six locations do not: it is the first site the chain has built from the ground up.
The brand was founded by siblings John and Nicole Maser, who have grown a regional footprint across South Florida with a concept built around sushi, hibachi, and a bar program. The Palm Beach Gardens address, within the Downtown Palm Beach Gardens mixed-use corridor, marks the brand's entry into the northern Palm Beach County market.
The ground-up construction separates this location from its predecessors, all of which occupy existing retail or restaurant spaces. Building a purpose-built restaurant gives the Masers direct control over kitchen infrastructure, hibachi table configuration, and bar layout — elements that define the Phat Boy format and are difficult to engineer into inherited footprints.
Per the operator's Instagram, the new location delivers the same sushi, hibachi, and lively bar experience as the brand's other South Florida units. Opening date, seat count, design team, and square footage have not been confirmed through available sourcing. As the first purpose-built Phat Boy Sushi, the Lake Victoria Gardens address will serve as a gauge for whether ground-up construction becomes a standard tool in how the Masers approach their next phase of growth.
