Fuku, the fried chicken chain created by David Chang, is now open at CityPlace in West Palm Beach, per the brand's Instagram. The Palm Beach County location is the chain's latest expansion, placing its habanero-brined, Korean-inspired crispy chicken sandwiches at the mixed-use retail and dining corridor anchoring downtown West Palm Beach.
Chang traces Fuku's origins to the Momofuku kitchen. Per the brand, the concept started as a late-night meal prepared for cooks working inside Momofuku before being developed into a standalone chain — a backstory built into the menu's defining technique: habanero brining, which drives heat and depth into the chicken before it is fried in a Korean-inspired style. Loaded waffle fries and crispy chicken sandwiches make up the core lineup at CityPlace.
Chang is best known for founding the Momofuku restaurant group, which grew from a single noodle bar in New York's East Village into a multi-concept operation with locations across multiple cities. Fuku became one of the portfolio's more scalable concepts, building its following in New York before expanding to other markets. The chain describes itself, per Instagram, as nationally recognized for its approach to crispy chicken.
The brand confirmed the CityPlace location is now open via Instagram, though operating hours, seating capacity, and square footage were not included in the announcement. Whether additional South Florida locations are planned was not addressed in the post.
